How to make egg kothu parotta

Parotta is the most loved food in india. Egg kothu Parotta is a combination of shredded parotta and eggs along with spices and seasonings making it the best comfort food. This food requires less ingredients, super easy to make and takes only some time.

Materials

  • 4 pieces Parottas
  • 1 piece Big onion
  • 2 pieces Tomatoes
  • 3 pieces green chilli
  • 10-12 pieces curry leaves
  • 3 eggs
  • few coriander leaves

Instructions

  • Take a frying pan and add 2 tablespoons of oil. Next add 1 teaspoon of mustard and jeera. Next add 10 to 12 curry leaves and 3 chopped green chillies. And fry these curry leaves.
  • After these are fried next add chopped onions and fry it for 2 minutes.
  • After onions where fried, next add tomatoes and deep fry them. After the tomatoes are cooked. Add 1/4 teaspoon of turmeric, 1/2 tablespoon of salt, 1/2 tablespoon of chilli powder and 1 teaspoon of coriander.
  • After frying and mixing them. Break 3 eggs and fry it and mix it. Mix it well with your onions and tomatoes and wait for a few minutes until the egg is cooked.
  • After the egg is cooked you can add a hand full of chopped coriander leaves. Taste the salt and spice levels and add some based on your prefernces.
  • Then take 4 cooked parottas and shred them into small pieces.
  • Then add the shredded parotta pieces in the frying pan and mix it well.
  • You can add some non veg gravy to your parrota and mix it to reduce the dryness as well.
  • Once mixed, your Egg kothu parotta is ready to be served with raitha.
